As an ode to "Top Chef" Season 23 in the Carolinas, I made this firecracker matzo which is a twist on a Southern staple, usually made with saltines. I swap in matzo and load them with zesty flavor since traditional matzo is otherwise very bland. They are a fun vehicle for my Pimento-Pickle Dip.
Technique tip: Flipping the matzo every 30 minutes makes a huge difference in distributing the seasoning evenly. Make sure not to crowd the pan.
Swap option: Swap for saltines when not making for Passover. You can also use matzo sheets broken into 2-inch pieces if you can't find crackers.
