Chef notes
Cigar-shaped, deep-fried cornbread dough — Jamaican Festival is a party for your mouth. In Jamaica, a day at the beach isn’t complete without a plate of fried fish and fresh-out-the-oil festival. The dough for this unique side is sweetened with a tups (little bit) of sugar. With just a handful of pantry staples, simple cornmeal dough is transformed into a crispy, savory bite that evokes memories of warm sand and cold beer.
