So many Passover recipes of my youth were heavy and meat-focused. I love this making this light, bright fish because it's packed with fresh spring flavors that refer back to the holiday (horseradish, parsley and dill) but also celebrate the season and don't weigh you down. Adding the orange is a nontraditional shoutout to a modern seder plate referring to the right of women to play a major role in the holiday.
Technique tip: As an alternative, you can segment the oranges by cutting in between the membranes, instead of slicing into rounds.
Swap options: You can use different tender herbs if desired (tarragon, thyme, chives). Arctic char, steelhead trout, ocean trout and salmon all work well for this recipe. Use any other green pitted olives. You can use blood oranges or even grapefruit instead of navel oranges.
